Grilled
Shrimp with Ginger Scallion Sauce

2 Tbs Light olive oil
·       
1 Tbs minced ginger
·       
1/3 cup sliced green onions
·       
Salt, pepper
·       
1 lb shrimp
·       
1 Tbs Sweet Soy Sauce
·       
1/8 Tsp chopped cilantro
 
1.  Heat oil in small skillet over medium
heat.  Add ginger; cook 2-3 minutes
stirring often.  Combine green onions
and ginger mixture in small bowl; season with salt.
2.  Preheat grill or oven to 400°.  Brush shrimp with olive oil; season with
salt and pepper.  Grill shrimp 3-5
minutes or until opaque.
3. Remove from grill and drizzle with green onion-ginger mixture and soy sauce. Sprinkle with chopped cilantro.
